Flavor Without Borders: The Story Behind Ehab

Chef Ehab grew up in Irbid, in the north of Jordan. The food that shaped him was not restaurant food. It was what came out of family kitchens every day — bread, mezze, rice, slow-cooked meat, and the habit of feeding whoever happened to be in the house.

That is a particular way of learning to cook. Nothing was written down. You learned by standing next to someone who already knew, and by being told when you had got it wrong.

The food travelled long before we did. Our job is to cook it properly and put enough of it on the table.

Coming to the United States

He moved to the US in 1989 and kept cooking. Over the following decades he worked across a range of international cuisines, and each of them left something behind. But Mediterranean flavour never left the centre of the work.

More than thirty-seven years in professional kitchens teaches you what travels and what does not. Some dishes need to be plated to order. Others are better after they have sat for twenty minutes and the flavours have settled into each other. Most of the Levantine repertoire falls into the second group, which is why the buffet format made sense to him long before it made sense as a business.

Why a buffet

Because it is closer to how the food is actually eaten. A Levantine table is not a sequence of courses. It is a spread in the middle that everyone reaches into, and people build their own plates from it.

A buffet line is that idea with a longer table. It also means a family with completely different tastes can sit down together and everyone eats properly — the child who only wants rice and chicken, the vegetarian, the one who wants to try everything.

What Flavor Without Borders means

It is not a marketing line about fusion. The Mediterranean has never been one cuisine. It is a sea with a great many kitchens around it, and they have been borrowing from each other for a very long time. Hummus, kebabs, flatbread and stuffed vegetables all belong to several countries at once, and arguing about which one owns them misses the point.

Where we are now

Ehab Mediterranean Buffet operates across Texas, with a catering arm running its own vans and an ordering app on iOS and Android. The kitchen still works the way it always did: recipes from the region, cooked fresh, in quantity, every day.

The name over the door is his. So is the standard on the line.
